Noble's Stuffed Baked Sweet Potatoes

Well for this Thanksgiving I came up with my very own recipe for sweet potatoes I think your gonna love it.

Stuffed Baked Sweet Potatoes

1 sweet potato for each person
Bake till tender and done
Set aside and cool  cut potatoes in half length wise and scoop out middle leaving a small amount of potato inside the skin . Put the center potato meat in a bowl and set aside. In a med macaroni sized pan put a couple inches of veg oil and bring to heat. Lightly salt and then flour the potato skin halves and then fry them just till they crisp up about 4 min.. Remove from oil and place open side down on paper towels.
Next add to the potato meat bowl:
1 cup of cream cheese
1/2 cup of mallow cream
3 tbsp brown sugar or honey
1 1/2 cups chopped pecans

Blend together just till smooth do not over blend no more than 1 minute. Put filling in now drained and cooled potato skins. Place in baking dish and bake for 45 min at 325. Serve after letting stand 5 min and it is wonderful topped with sour cream or heres an idea, serve it flambae.

Almost Homemade Bread

OK it was meant to be funny. As my old tired joints no longer allow me to kneed my beautiful breads by hand anymore I have found a willing friend to help me out. My bread machine. While I never use the bread recipes that come with it you feel free to try them out. The machine helps busy or tired folks make a delicious treat that used to be a staple in our country in our homes. So much has changed, and trust me bread without additives is BETTER!

in your bread machine
12 ounces water
1 pat butter
1 1/2 tsp salt
2 tsp raw or brown sugar or honey
1 ounce cream or sour cream
5 cups of flour you may need a little more this is not set in stone
2 tbsp yeast I used rapid rise or fletchmans

combine in order they are listed put on dough cycle on your bread machine, when the bread dough has risen place on buttered cookie sheet with buttered hands flatten dough into a rectangular form and roll it up making sure to squeeze the dough together where the ends meet the loaf including the ends( don't forget the ends!) next cut about 6 diagonal line with a sharp knife about 1/2 way through the dough loaf. Let the dough rise this way until double at least. It can got up to 2x its up to you. Bake @ 350 for 40 min remove from oven and butter all over. Then allow to sit, the loaf will soften and in about 45 min you can cut and enjoy it.

This is a delicious basic loaf you can use for sandwiches or anything.

Chicken Fried Rice Spicy

Boil 3 chicken breasts or thighs and set aside. Remove chicken and chop up. Save water.
1 cup frozen peas
1 HOT PEPPER to your taste
2 tsp chicken base
1 can cream of chicken

In large frying pan stainless steel or non stick fry up 2 cups of rice in a little butter. When it starts looking kind of translucent add 4 cups of the water you boiled your chicken in reduce heat to med and cover.
Chop up the hottest pepper you and your family can enjoy and add 2 tsp of chicken base or feel free to experiment here. Add lib .
When the rice is cooked for about 5 min add chopped chicken to rice and water. Add frozen peas and cook until rice is almost done stir in 1 can of cream of chicken soup. Cover quickly and let steam covered with heat turned off for 5 minutes.

Oh, your gonna love it!

My Meat and Potato Pie

Everyone I suppose has their own twist on this rather simple dinner. Here is mine.

2 lbs cooked and drained hamburger meat

I cooked the following veggies in the meat after draining the grease.

1/2 cup chopped jalapenos
1 cup chopped green pepper
2 cups chopped mushrooms
6 slices cheese, yellow or white or spicy

You will need 5 cups prepared mashed potatoes

In another pan prepare instant potatoes as on package except you are going to add 1 cup sour cream to the liquid and heat till very hot not boiling. Turn off and let stand for a few minutes and then add instant potato flakes.

 WAVERLY CRACKERS  are the crust of this pie. You will need 3 packages out of the box and crush to crumbs. Set aside.
Now we are ready to assemble the pie.

Heavily butter a 9X14 pan and using 2/3 of the crumbs cover the buttered sides and bottom of pan and pat down. 
Next spoon in 1/2 of the burger mixture.
Layer the cheese and then spoon on the last half of the burger.
Next pile on the mashed potatoes and spread them around flattening them to the edges of the pan.
Sprinkle on the last of the Waverly crumbs and bake at 400 for 35 minutes.
Remove from oven and let stand 5 minutes before serving.

Tenderloin My Way

You will love this truly Alaskan take on tenderloin be it moose or beef.

Tenderloin steaks 2 inches thick
Olive Oil
Canadian Steak Seasoning
Salt and Pepper

BBQ Grill

Coat the steaks in olive oil then rub salt and other spices let stand about 10 minutes then grill at 400 15 min on one side and about 5 on the other for med-rare. YUM.

Steamed and Grilled Balsamic Potatoes

We start with medium potatoes, wash, halve and steam till just done. Remove and cool. Then place in a bowl, and drizzle olive oil, add sea salt, balsamic vinegar,dill sprigs and pepper. Toss well and set aside for 20 min allowing flavors to mingle. Then grill on 400 grill for 15 min till crispy. Serve as is or with a special sauce.
